#NationalPumpkinCheesecakeDay

I know that it’s Wednesday, which means it’s freezer meal day, but it is also, EQUALLY IMPORTANTLY, #NationalPumpkinCheesecakeDay. I frankly cannot imagine a more decadent, delicious, or more seasonal dessert, and it just so happens that an important part of this recipe is freezing it, so this doubles up our Wednesday to accommodate both LCFR priorities!

What’s awesome about Chelsea’s Messy Apron’s recipe is that it has such a unique spin on pumpkin cheesecake. It is a hybrid of cheesecake, ice cream, and pumpkin pie. The pie is frozen to give it an ice-creamy texture, the cheesecake flavor comes from cream cheese, and the pumpkin pie flavor comes from regular pumpkin with some pumpkin pie spice. It’s the perfect combination of flavors – you’ll agree.

Most importantly, this recipe is crazy easy with a prep time of only 15 minutes, and a total time of 15 minutes. That means all you’re doing is prepping and freezing – yes, please!

Ingredients include cinnamon graham crackers, light brown sugar, butter, pumpkin puree, cream cheese, cool whip, sweetened condensed milk, pumpkin pie spice, and butter extract.

To make the crust, you simply blend the graham crackers and stir in brown sugar and softened butter, and then press the mixture into the bottom of a spring form pan – place in the freezer while you make the filling!

To make the filling, beat cream cheese in a bowl until smooth, and then add pumpkin puree, pumpkin spice, and butter extract. Beat until combined and then slowly add in condensed milk until smooth. Fold in cool whip just until combined – be careful not to overwhip!

Pour the mixture into the prepared crust and freeze overnight or for 6-8 hours. Let soften for about 10 minutes until serving.

The internet is bursting at the seams for #nationalcheesecakeday! I’m not the biggest fan of sweets, but if cheesecake is on the menu, I’ll never turn it down – landslide my favorite. Pretty excited about this holiday 🙂

I want to kick things off by letting you all in on some of the best nation-wide discounts in honor of today!

  • I’m not at all shocked, but The Cheesecake Factory is offering half-priced cheesecake on July 29 + 30th. Their cheesecake is so legitimate that it’s no wonder their namesake is what it is. They offer over 30 cheesecakes, from the original, to strawberry, to red velvet, to peanut butter, to mango key lime…dare I go on? Huffington Post also informs me that yesterday, The Cheesecake Factory debuted their new salted caramel cheesecake. #drool
  • Huffington Post also gives us the heads up about these other great deals nationwide:
  • Cheesecake Bistro by Copeland’s: All day on July 30, buy one slice of cheesecake and receive a free slice of equal or lesser value. You can also get $10 off the purchase of any whole cheesecake on this day.
  • Chompie’s: At any Chompie’s restaurant in the Phoenix area, purchase one slice of cheesecake at regular price ($6.95) and get another slice free at the bakery counter. Guests can choose from several varieties, including Oreo, chocolate, classic and red velvet.

  • Festival Foods: The Wisconsin grocer’s cheesecakes are on sale all week for $6.98 in honor of National Cheesecake Day.
  • Peteet’s Famous Cheesecake: The Michigan-based cheesecake hot spot is giving the first 100 customers a free slice of cheesecake on July 30 at both locations in Oak Park and West Bloomfield. You can also get 20 percent off the rest of the day.

Frankly, I’ve never heard of these other spots, and Cheesecake Factory is a bit of a hike for us. I’m certainly not above making my own cheesecake! Wanted to share some of my favorite recipes if you’re up for the challenge (not really, they’re pretty simple)!

It may still be summer, but I am an absolute SUCKER for pumpkin cheesecake – Natasha’s Kitchen has an awesome recipe for it. You will need a food processor and a mixer, but beyond that, this is pretty simple. Natasha even gives you an incredible recipe for a caramel sauce and a rum infused whipped cream. Give yourself some time with this recipe, because it requires 45 minutes of cooking time and MINIMUM 4 hours of chilling time. It’s perfect for fall + Thanksgiving, or, you know, just for kicks on #nationalcheesecakeday 🙂

One of the problems with cheesecake is that it is so, so rich and filling, that sometimes you end up gradually eating an entire cheesecake over the duration of a week. Although you COULD stretch things to #nationalcheesecakeWEEK, I, personally, would rather not for the sake of my waistline. Here’s an awesome recipe for little bite sized cheesecakes (and it’s no-bake! Easy peasy!).

Bakers Royale‘s recipe requires a mixer and little mini ramekins of your choice. They boast that they only require 10 minutes prep – and then throw in the fridge for 6 hours (I know, give yourself plenty of time!) and you are all set! This one’s sure to please any cookies and cream fan!
